#55. Angry Cupcakes
Thanks to a car dealer who shall remain nameless (for now), I was stressed and fuming this evening. I also had a kitchen to clean. Perfect time to try baking some cupcakes… and I nailed the recipe! I perfected it on the second try!
The cupcake recipe I used was given to me by my Aunt Debbie for my birthday this year. I’m not going to give details, but I think cake flour (not all-purpose) and egg yolks (not whites) were what made these so much better than the last recipe. For the frosting, I used the buttercream recommended by Superjux. Much creamier and less sweet than the last one I tried. (In case you use the frosting recipe, be sure to follow Superjux’s modifications… I did, and it turned out great.)
And yes, Laurie, I’ll bring you a couple of cupcakes in the morning.

Glad the frosting worked for you. (And I’ve found gel coloring as opposed to water based coloring to work really well with it.) And yes, isn’t cake flour wonderful?!

The water based coloring worked fine, though you’re right about the beige color of the frosting. I’m so in love with cake flour right now. I think it made all the difference.
